Consider pinning the versions of Git packages

Depending on the Git versions of OmpSs-2 packages causes frequent rebuilds and occasional breakage. We should pin those repositories to a specific commit, and update them on a regularly basis.

This will also allow those packages to be built from flakes (CC @arocanon).
